Asparagus and Parmesan

Shredded (grated) Parmesan cheese
Cayenne
Salt and pepper
A little melted butter
Preheat the oven to 350°F(180°C)
Begin by buttering a baking dish.
Cut off the woody part and then wash the asparagus in cold
water. Put the asparagus into a saucepan of boiling salted
water and simmer until tender.
Put a layer of the asparagus into the prepared baking dish,
sprinkle with a little shredded Parmesan cheese, cayenne,
salt and pepper. Repeat layering twice more.
Then pour over a little melted butter, on top of this crack
one egg for each person to be served. Bake until the eggs
are just set.
