Cheese and Ale Toasties
1 teaspoon of French mustard
½ teaspoon salt
4 slices of thick bread
8oz Cheddar cheese
1 cup of brown ale or beer
2 eggs
1 tablespoon of butter
A speck of cayenne
First cut up the cheese into small pieces; and then beat
together the eggs in a heatproof bowl .
Now add the cheese, butter cayenne, French mustard, salt
and ale or beer. Position the bowl over a saucepan of gently
simmering water and stir continuously until the cheese melts
and all the ingredients are well combined.
Toast four slices of thick bread on both sides and then spoon
the cheese mixture over the slices of toast. Serve immediately.
