Cheese Straws
2oz finely shredded (grated) Parmesan cheese
2oz all-purpose flour
2oz butter
1 egg yolk
A little cayenne
Salt
Butter a baking sheet
Preheat the oven to 350°F(180°C)
Sift together the flour, cayenne and salt, then with your
fingertips rub in the butter until the mixture resembles breadcrumbs.
Now stir in the cheese, then add the egg yolk and mix to
form a paste, knead until smooth. Roll out on a floured surface
to about one-eighth to a quarter of an inch thick.
Cut into thin strips and place on the prepared baking sheet.
Bake for ten minutes or until golden.
If you wish Parmesan cheese can be substituted with cheddar
cheese.
