Macaroni Cheese
4oz shredded (grated) cheese
3oz macaroni
1oz butter
1oz flour
½ a pint of milk
¼ of a pint of reserved macaroni water
½ a teaspoon of made mustard
Breadcrumbs
Salt and pepper
Preheat the oven to 425°F (220°C)
Put plenty of water into a large saucepan and bring to the
boil, add a little salt, then add the macaroni and cook
for approximately twenty minutes. Drain off the macaroni
over a bowl and reserve about a quarter pint of the water.
Next, in a second saucepan, gently melt the butter, then
stir in the flour, the milk and a quarter pint of the reserved
macaroni water and boil for a few minutes.
Now, stir in 3oz of the grated cheese, salt, pepper and
made mustard, add the cooked macaroni and stir to ensure
that it is well coated with the cheese sauce. Pour into
a buttered baking dish. Sprinkle over some breadcrumbs and
the remaining cheese and bake in the oven for approximately
twenty minutes.
