Cheese and Wine Chicken
Chicken breasts
¾ of a cup of shredded (grated) Swiss cheese
2 tablespoons shredded (grated) Parmesan cheese
3 tablespoons white wine
½ cup chicken stock
3 tablespoons of butter
2 finely chopped green onions
1 tablespoon fresh chopped parsley
One teaspoon of fresh thyme or half a teaspoon dried thyme
2 tablespoons breadcrumbs
Salt and pepper to season

Preheat the oven to 375°F(190°C)
Begin by using some of the butter to lightly grease a shallow
baking dish. Put the chicken in the baking dish, add the
green onions, parsley and thyme and season with salt and
pepper. In a jug or basin mix together the chicken stock
and wine and then pour over the chicken. Cover and bake
for twenty minutes.
Meanwhile, in a small basin mix together the breadcrumbs
with the shredded Swiss and Parmesan cheeses. Remove from
the oven and sprinkle the cheese and breadcrumb mixture
over the chicken, and dot with the remaining butter. Place
under a preheated grill (broiler) until the cheese has melted
and tinged with gold.
