Easy Cheesecake
6oz graham biscuits (crushed)
3oz butter
Two and a quarter pounds of cream cheese
Four and a half fluid ounces of concentrated orange juice.
3oz (superfine) caster sugar
Fruit of your choice
Begin by lightly oiling a 9 inch pie pan with a loose bottom.
Crush the graham biscuits with a rolling pin. Then, being
careful to not let it brown, melt the butter in a saucepan,
add the crushed graham biscuits and mix well. Turn the mixture
into the prepared pie pan and press evenly into the base and
sides. Then place in the refrigerator to firm.
Now beat together the cream cheese and superfine sugar,
then add the orange juice and beat until combined and smooth.
Pour into the firmed biscuit lined pan and spread evenly.
Cover and return to the refrigerator to chill.
Just before serving top with fruit of your choice.
