Camembert
Camembert cheese originates from the town of the same name
in Normandy. It is a soft cheese similar to Brie in flavor
and light yellow in color.
Legend has it that Marie Harel invented this tasty cheese
in the village of Camembert in 1789 when a Priest gave her
the secret to the production of the cheese in return for her
hiding him on her farm during the French Revolution.
However, it is known that Camembert was in existence well
before Marie Harel was even born! In as early as 1554, the
writer Charles Estienne wrote of the cheese as did Brugerin
de Champier in 1569.
Camembert is made from cow's milk- though sometimes goat's
milk is used. It takes about three weeks to make and age and
the flavor becomes stronger as it ripens and becomes more
runny.
Traditionally this cheese is wrapped in paper and then put
in thin wooden boxes. This was first introduced when countries
across the world- particularly in America- wanted this cheese
and it was necessary to devise a way to transport it. It has
now become the normal way for Camembert to be packaged.
This cheese is a favorite all over the world though particularly
in France. It tastes best when served with meat, fresh bread
and a good glass of wine.
