Cheddar and Monterey Jack
Cheddar cheese is a semi-hard cheese which originates from
Cheddar Gorge in Somerset. There is the story that Cheddar
cheese was first discovered when a milkmaid left a pail of
milk in one of the caves of Cheddar Gorge and on her return
the milk had turned into what we now know as Cheddar cheese.
Cheddar has been a great favorite all over the world for hundreds
of years and in the reign of Charles I was very much in demand
and, as it was so expensive and rare, it could only be found
at the court itself.
Cheddar cheese is made from unpasturized cows milk and matured
for one year or more. The cheese is then often colored to
make it more yellow or even orange.
Monterey Jack cheese, when aged, is part of the cheddar cheese
family and is very similar in taste, texture and method in
which it is made. Both cheeses come in a variety of tastes
ranging from mild to strong and mature. The longer they are
matured the sharper their tastes .
The cheeses of the Cheddar family taste great in sandwiches,
grated over pasta or jacket potatoes and, because it melts
easily, work very well in cooking.
