Mascarpone cheese
Mascarpone cheese is an Italian cheese originally from the
Lombardy region. It is made from cow's milk and these cows
are fed a special diet of grass with herbs and flowers to
give their milk that special fresh taste which Mascarpone
is famous for.
This cheese has the texture of thick cream. It is white in
color and tastes sweet and creamy with an amazing smell of
buttery milk when it is fresh.
Mascarpone cheese is generally known for its use as a dessert
cheese in tiramisu. However, this cheese is wonderfully versatile.
A speciality in Italy is to eat this cheese which anchovies
mustard or spices but this cheese tastes just as good simply
with fruit.
The name Mascarpone is said to originate from the Spanish
"mas que bueno" which means "more than good"
and although this story isn't necessarily true it is easy
to see why many people believe this tale.
